Dish with a lot of cilantro?
We do a CSA in my household and they allow you to double up on a week if you're going to miss another week's pickup. We got cilantro last week and doubled up this week since we'll miss the next one. And guess what? More cilantro. So now I have 3 huge bunches of cilantro that I need to cook in the next week.
Is there any dish that can handle that level of cilantro without being gross? Is there something I can make out of it to extend its shelf life (like a cilantro pesto or the like)? Please help I have so much cilantro.
Bonus: Also have 2 huge heads of celery now so if you're aware of bulk uses for celery that's also appreciated.
