Caramelized Onions: the secret
So tonight I made some flawless caramelized onions and I thought I'd share the secret with you all.
Step 1: 4-5 cups on chopped onions. Doesn't matter how you shop them. Put these in an oven safe pot with a bit of oil (I used about 2T of coconut), salt, pepper, some finely shopped garlic (I used 5 cloves) and some rashers on bacon (no need to render, the oven will take care of it). Sprinkle in a half teaspoon of baking soda and a teaspoon of sugar.
Step 2: heat oven to 400 and pop the pot in there covered.
Step 3: take it out at 15 minutes, 30 minutes, 45 minutes, and 1 hour to stir. at the 45, take the lid off.
Step 4: your 2 year old son takes a swan dive off the kitchen table and splits his head open, spewing blood everywhere.
Step 5: run around like a madman trying to find gauze and finally settle on taking him to the hospital in a blood soaked shirt with a small wad of toilet paper and 2 Frozen Band Aids holding it in place.
Step 6: just barely remember to turn the oven off as you run out hte door like an Olympic sprinter.
Step 7: when you come home 3 hour later, they will be flawless and at a great temperature to store. Go ahead and eat a spoonful or two as you do. You deserve it.
EDIT: if you want to skip the injury if a small child you can stir two more times before turning the stove off and letting it settle in. You will want to add the lid back on as soon as it looks dry.
