Are you supposed to season with pepper before or after cooking?
Everytime I season with pepper before, I end up burning the meat (fish,steak,lamb, etc.). But if I season after, it doesn't taste the same.
Also, how do you get rid of the overwhelming gamey smell and taste in lamb? I seasoned with salt, and finished it off with butter and thyme, but it was still overwhelming.
